Enchiladas

Undercooking taquitos is a common mistake in most Mexican establishments. This embarrassment is usually remedied by covering the abominations with a red sauce and melted cheese, and serving the resultant mess as enchiladas. When confronted with the menu in a Tex Mex restaurant, my great aunt Francie, 102 years old, waved her inch long green fingernails in the air, exhaled a plume of smoke from her More cigarette, and exclaimed in a voice so rough it could peel the fur off a puppy "what the hell's an enchilada?" She then proceeded to order 7 plates and a pitcher of sangria which she downed in one go. Aunt Frances was later found in the back of the restaurant underneath a congo line of short order cooks.
